Chicha has been consumed by the Shuar nationality since ancient times.
Among some of the gastronomic traditions that the Shuar still preserve is the
elaboration of cassava chicha. This drink is typical of this nationality and has achieved
survive the passage of time.
Chicha is usually always offered as a synonym of friendship when someone
mestizo comes to visit the communities. This is confirmed by the Shuar leader Jaime Zurita, who
He says that they share not only that drink but also food such as ayampaco or maito,
with the visitor “since we preserve the principle of Arutam (God) when someone arrives
we provide food as a synonym of friendship”.
